I search for a Trick and a Technic where the Spectator is shuffled a deck remove one card and then the magician can say what card it is after he looks up quickly to the cards !

Try clocking the deck. You can find an example of this in Classic Collection Vol. 1 by Harry Lorayne. It's in the section on the Epitome Location.

I have found clocking difficult to do. I think easier (but open to debate, I guess), is to use a memorized deck (with the right handling). Check out Simon Aronson's excellent web site.
There is another very simple way to do this. Send me a private message and I will tell you. (I do not want to expose it here.)
