Bob Sheets' It's the Rules has been mentioned several times throughout this thread. I re-shot the tutorial to make the routine MUCH easier to learn than when it was originally released on VHS tape and then subsequently transferred to DVD with no chapter markers.

Eugene Burger has a nice routine with Dice & Coins Through Table on an old Steven's Greater Magic DVD.
I don't know if it's his, but I like the color changing dice he does as an opening effect.

Check out Curtis Kam's version of Sach's dice routine from his download "Hacking Sack and Bolt". The magic completely takes place in the spectator's hand which adds more engagement. Also you get a bonus effect where a bolt twists out of a nut so who doesn't like that Smile.

There was an old Eddie Joseph trick with cards and 2 dice. Card selected and returned. Spectator rolls the dice. Deal to the number on the 1st die, and you get a card showing the number on the 2nd die. Deal to the number on the 2nd die and get the number showing on the 1st die. Add the 2 numbers together and deal down and there is the selected card. With some nice false cuts thrown in it is very good.

I've just written a short article about dice magic. It includes a trick of mine called "Sum the Spots", which is a fun demonstration of "speed counting" that ends with a strong moment of mental magic.
