After I finish my CSB, I was wondering what a good 2 coin routine would be to go into. (I'll say something along the lines of maybe 3 coins are too many and take away the Chinese coin)

Why not go into a Copper Silver Tranpositon. There are a bunch of different versions out there.

The too many coins line/approach works well. Slydini liked it. Have you considered taking it down to just one coin and a Roth-Flurry to finish?

Apollo Robbins, and Shoot Ogawa both have an two coin production/vanish sequence on Cultural Xchange 2 that you might be able to incorporate.
