Dan Turcotte's site http://www.youdomagic.com has some great video and e-book downloads. They're extremely well produced, very reasonably priced and Dan's great to deal with.
He covers each item in great detail and many include video clips of Dan working in a real-life restaurant situation.
Highly recommended.
