Many answers to this question. One of the easiest ways, if you don't have a pro version of Acrobat, is to convert a document via your scanner software or through a graphics program such as PrintShop, using the "save as" feature.

I've been using pdf995 for a while now with no complaints, although I'm not really aware of the competition, nor have I made super heavy-duty documents...
http://www.pdf995.com/ Assuming there hasn't been any major feature changes, this is how it works. Essentially, you install this, press print on any program that allows you to print, and whatever you print turns into a PDF file rather than go out to an actual printer. The version I have comes with ad-ware, though, so if you run it, a browser will open to the pdf995 site.
