I'm looking for a "Valentines Day" theme type of trick I can perform for my Fiance for Valentines Day. Keep in mind that I test all of my magic on her so I'm looking for somewhat of a surprise. She already knows "Heartbreaker", so that's out of the question. Plus I don't think bringing up a "past crush" would really fit in with a Valentines Day theme even if I didn't know it! Any Ideas?

Anniversary Waltz - check Doc Eason's bar magic videos.

This probably won't answer your question, but it's a funny Valentine's Day-magic related thing:

I like Jay Sankey's Firestarters for this occasion.

All good suggestions, but also consider my "Scoring With The Tarot" eBook at Lybrary.com. There are a few routines in there with a strong connecting theme.
Any questions, feel free to PM.
