I used a pretty simple recipe (which I'll adjust next time):
Peel the parsnips and halve them lengthwise. Cook them in boiling water until tender. (I overcooked them a little.) Let them cool, cut them again lengthwise (into quarters now), roll them in melted butter, and chill them. Put them into a bag with flour and shake it to coat them, then sauté them in butter until they're golden brown. Apart from cooking them a bit less, I'll season them with salt and pepper before coating them with flour. Nevertheless, they were quite tasty. |
