I am very reluctant to add anything to Michael's excellent post, a post that is worthy of publication in any book or magazine, because it definitely does not need anything added to it, but I will tell what I think it means in relation to this thread.
When you have special customer (or one that says ‘take care of my table’), the new school magician will think of a routine that he doesn’t do much, that may require special or long set up, or that costs some money to use. An old school magician will think of the most used and most rehearsed routines. He has worked out every detail for every type of audience. He knows it will not fail to get laughter and applause. Don’t get me wrong, there is definitely a place for new material or other material, but not for a special customers that you want to make your best impression for or ‘take care of.’
