After weeks of searching for "my" ideal wallet (as a wallet newbie), I have narrowed down my options to either the Buma Hip Wallet or the Pimpernel Notecase. Does anyone know the difference between these twho (except for the price).

As far as I can tell (without having seen them for real), you can do the same thing with both of them.

The Buma Hip Wallet uses a different principle to accomplish its switches than does the Pimpernel Notecase. I like the PN better although I own both. Sorry that I can't be any more specific than that.
