I would imagine you could use a very light cream which would float on top of the coffee. Then, it's just a matter of how artistic you are.

I once saw this on the "Food Network". it was a competition of coffee/latte servers, who mastered the craft of making this beautiful artwork with the hot milk in latte. The coffee art in that link are by-far the best I've ever seen, just amazing!
