I have found a few resources for pigs' eyes and cows' eyes. Have any of you worked with these? I recall Docc Hilford saying that they should be stored in your freezer to keep them fresh. Is there any hazard in handling real animal eyes? One site I found sells cow eyes by the bucket!

Check with your local agricultural agent. If there is any kind of farming within a few miles of where you live, there will be an agricultural agent who can tell you what you need to know.
If people in your area are very religious, don't start your conversation with, "I'm a magician, and I would like to use pigs' eyes for a trick." Otherwise, just tell him that you have an experiment you are doing that requires you to handle pigs' eyes or cows' eyes, and that you want to know what kind of precautions to take. Or look it up on a taxidermy site.

Which, as a small scale farmer I can say this, you should always know where your food, or props in this case, comes from. Some slaughter houses and tanneries in places where there have been some disease scares now have to treat offal as biohazard material and dispose of it in an appropriate way. Mark
