Love Jim's work(s). His "Restaurant Workers Handbook" is great as well.
Jim Pace and Kirk Charles led my way through their various writings, to a great run of several years working restaurants and strolling venues. Before reading their works, I had zero clue how to approach the "powers that be" in the field. I have always pitched myself as a magician who happens to have many years of successful sales and marketing (17 years in high ticket retail sales) who would love a shot at increasing the clients customer base and cash flow. Most CEO's and VP's want that. Then all you have to do is draw the crowds and increase the profits!
