One of the ways to get around that coin grab is to play for it - do a change that really does leave you with an innocent coin, say using the Dusheck gaff and losing it in the change process... but don't let that be the climax of the trick - there's still that other coin which somehow changes even though isolated on the table, under a prop or in a volunteer's hand.
That "must be the coins" thing can also be handled by setting the trick in some sort of presentation frame. The sun and moon is a good half story. What makes the sun and moon change places? Sol does that frame thing with the Mayans story. Others play "why can't I be you" where the joke is that if you tell eachother apart by the coins you have, then by changing the coins (they get to wave their hand) they play the magican for a moment. Lots of ways to use the trick to make a fun moment that climaxes when they open their hand and react to the impossible. BTW it can be fun to pick a skeptic or hulking tough-guy type so the group can enjoy their reaction - as long as you are sure you can do that in fun and not at their expense.

I hear that.Their is a difference between "Look what I can do make you look stupid"
