Or, it could be Napoleon's fault for not being able to feed his troops (Start at 7:00 on this video, and you'll see how one Chicken and Egg dish played a deeply meaningful role in history). Everyone in the States knows Wienerschnitzel (literally, Vienna Schnitzel--schnitzel just means "cutlet"), which is a breaded veal cutlet. I've never seen that available in a German restaurant. I'm sure it exists somewhere, but I haven't seen it. What you get here in Germany runs a huge gamut. Here a schnitzel is ALWAYS pork. There is "schnitzel wiener art" (schnitzel Vienna style, not to be confused with Vienna schnitzel ), which is a breaded pork cutlet usually served with fries and a lemon wedge; jaeger schnitzel, a breaded pork cutlet with "jaeger" sauce ("jaeger" means "hunter")--usually a cream mushroom sauce (excellent!); Zigeuner schnitzel, )Ziqueuner means "gypsy", and the sauce is a tomato, onion, bell pepper sauce that I don't like as much as the Jaeger sauce. I'm taking to long to get to the point. My FAVORITE is "schnitzel Holstein", named after a city in Germany. It's a breaded pork cutlet served with a wedge of very thick sliced bacon and a fried egg on top. So I LOVE my pork cutlet served with bacon. |
