Oh god, MY EYES! I hope the demo just shows what pinky count isn't supposed to look like. You should use your ring and middle fingers to prevent the cards from popping half inch up each time you do the count. When done right the move can be burned and nothing can be seen.

You make a good point, and I assure you that it is invisible when Doug uses it in performance mode. The examples on the trailer are exaggerated to assist in teaching the move. He starts big and goes down to imperceptibly small counting.
