I'm looking to get into restaurant magic in the next few months, and I was wondering how many hours you work per night? Say you work a Friday night, how many hours would you be at the restaurant? 3 or 4 hours? More? Less?

I work 3 hours usually.
I charge based on entertaining everyone who comes in from 8:00 till close (around 11). |

It depends on where you are working and what you are doing. Some restaurants, like the famous Schulien's (now O'Donavan's) works you on a six hour shift for a rather miniscule fee and a good meal.
Most places I have worked have been in the two to four hour range - much easier on the feet AND the brain, IMPO. When I do restaurants these days, I usually go for a 2 hour shot and target the busiest times so I can work the waiting area and the lounge more than the restaurant proper. This way, I can market them on the idea that I keep people from leaving - which lets the restaurant turn more tables and make more money on the bar. I've always done two hours, during the dinner rush. Depending on the night of the week and location, that means eaither 6-8, 6:30-8:30 or 7-9. On busy nights, I have often stayed longer for an additional fee, set up in advance with management.
better to be busy for a solid 2 hours than busy for 2-2.5 and then standing around a lot for an hour or two! It also allows me time to do private evening shows, where I make significantly more money.

I usually do 2 hours. three hours occasionally. I did four hours once at this house party and it sucked...i ran out of gas and creativity

Well, it's interesting that you ask. My pal Al The Only ran a survey in Magic Menu a few years ago. Fees ranged from about $10/hour all the way up to about $75/hour.
I often do about 2 hours in a restaurant for between $75 and $100 for two hours and a meal voucher that I can transfer to someone else. These vouchers, good for one meal (sometimes with the purchase of a meal of equal or higher value), are worth their weight in gold as I can give them to special clients, use them for promotional giveaways, thank you gifts and the like. I have made from $25 to $50 per hour, depending on how "ritzy" the restaurant is. And even though I do not actively solicit tips, I usually make at least as much as my salary in tips. I also have always got a free meal or voucher/gift certificate in addition to my pay.

For several years I used to book three hours per shift, but it takes an awful lot of stamina. Today, I prefer working just two.

What do all of you pros do during the time when you aren't table hopping. A day job? Or is all of that time spent up doing big shows?

One weekly restaurant gig and booking private parties does it for me.
I work a two-hour time slot, by the way. That's plenty for me, and it covers the restaurant's busy time. I do not accept tips, so I negotiated for a slightly higher fee. |

I work two hours a night, for about $40 per hour plus tips. I do not, however, solicit tips. I just accept the ones that are offered. The restaurant I work does not have a wait staff. If it did, I would direct my tips to them. Of course I would try to negotiate a higher fee, though.

I work a three hour shift, but on holidays with multiple seatings, I work a six hour shift. It's funny, when I was younger, I would spend the next day in bed, now I can take it in my stride. The most I have ever worked & I do it about ten times per year is ten hours of continuous close-up. This is not in a restaurant, but for two private back to back 5 hour shows. When I do that, I come home exhausted but feel great by the next morning. I am finding that as I get older, my endurance is increasing.
