For a small packet trick, I would recommend "Twisting the Aces." It uses an Elmsley count. With a little bit of practice, you could do the count quite naturally.

Try Up The Ante as the trick that does require dealing......you will leave them flummoxed!

A great self working in the hands of the spectaor is the "7-16" card trick. They do the dealing and it's an amazing card trick. Hard to reverse engineer for the spectator also.
