Raw, they're rather bitter. Not so good.

Cooked: awesome! (nb, Bob.)

Slice them about ½ inch (1 cm) thick, sauté them in butter until they're crisp, add a splash of white wine, some thyme, and a bit of smoked salt.

They sell them in kits. If the oyster mushroom kits work as well as they white button mushroom kit (I have no reason to think they wouldn't) it's definitely worth while. The oyster kits may even produce faster than the button mushrooms. There is a thread here somewhere with pics of the grow I did from a kit.

I love mushrooms. We used to make a wild mushroom demi-glace at one of the places I used to cook. This was served over a puff pastry that was stuffed with a mushroom duxelle. Fantastic.

Chanterelles are pretty good too. Smile

I wish that I'd read this before I left to run errands this afternoon. Costco had Chantarelles for $10.99/lb., but I've never (as far as I can recall) tried Chantarelles, so I didn't get any. Now I have to go back.
