Raw, they're rather bitter. Not so good.
Cooked: awesome! (nb, Bob.) Slice them about ½ inch (1 cm) thick, sauté them in butter until they're crisp, add a splash of white wine, some thyme, and a bit of smoked salt. Awesome²! |

I love mushrooms. We used to make a wild mushroom demi-glace at one of the places I used to cook. This was served over a puff pastry that was stuffed with a mushroom duxelle. Fantastic. Chanterelles are pretty good too.
