My wife takes three of the kids to Boston to the Anime convention held there each year.
(Digression, this year, Christopher put together a home-made Astro Boy costume and Amber bought a beautiful Princess Serenity costume. Both of them were posing for pictures all weekend and Chris got asked to be the "King" in a session of "Cosplay Chess" which is a thing they do each year.) One kid doesn't care for anime and I keep him home with me. We have pizza, watch movies, play video games, it's a good weekend. A tradition (this has been going on for several years) is that I make a dinner for them when they come back on Sunday night. Usually, the con is held over Easter weekend and I make an Easter dinner (Ham, veggies, rolls, etc.). But this year, they held it this weekend whereas Easter is still a couple of weeks away so I chose to make a chili dinner with salad and corn bread. The meal was a major hit. (My daughter said the dinner actually made the convention being over and leaving Boston bearable.) Corn bread, salad, are all standard, but I'd like to share the chili recipe with you. This is made in a slow cooker (Crock Pot). 1 can diced tomatoes 15 oz 1 can tomato sauce 8 oz 1 can kidney beans 15 oz 1 lb ground beef or turkey 1 packet chili seasoning spice aisle (or use 1 tbsp. Lawry's + 1 tbsp. minced dehydrated onions) 1/3 c. water (only if you want a thinner version) Brown the meat in a skillet, drain and add to your crockpot. Add all other ingredients and stir (can add a little chili powder if you want more spice). Put on low and cook for four hours (you can leave it in to cook all day, but it needs at least four hours before it's ready.) The recipe claims it feeds 6, I decided to double it and got 8 servings out of double the recipe. I dunno, maybe they were feeding 6 supermodels!

When I was in college back in the late 80's a friend of mine came up with an oven baked chili recipe (we were poor college students and couldn't afford a crock pot). I used it while in the AF during a chili cook off in Korea; and won.
Spring forward, I make beans every other weekend here. Be it kidney or black beans I buy the dry beans and soak them over night. I season with cumin powder, black pepper, and smoked paprika. On my Friday I take some veggies (onions, peppers, and jalapeno's) home from the chow hall to add as well (why buy when it is free?). I made kidney beans with chicken hearts this weekend and it turned out especially well.
We shall meet in the place where there is no darkness...

Because of my wife's kidney problems, she can't have beans. (She can't have tomatoes either, but she ate chili and salad with tomatoes anyway, beans are worse) So I put the beans in a separate pot and people who wanted them could add them themselves.

The chicken hearts do really well with the beans as they absorb the flavor of the seasoning. Very tender when slow cooked and look like oversized kidney beans that pop when you eat them.
I have used chicken livers with black beans before and they would crumble while cooking and stirring. Most times it is what they may have at the chow hall for me to base my variations. Sometimes I take home curry beef cubes (though I don't like curry) and make beef chili. I make it in the morning and let is slow cook all day.

The only places I've found chicken hearts in recent memory is at Brazilian style rodÃzio restaurants where they bring them to the table on a cooking spit / skewer.
It's good to know that the chickens are at least still making them!

A lot of non-choice cuts in North America are considered a delicacy elsewhere.

Seriously, the taste is a little hard to describe and must depend on the preparation. I'd say that basic pan fried chicken hearts have a gamey, bloody taste. Yum.
