Sorry if this was aked previously, but is there a well-recommended video or book that teaches the ins & outs of table hopping?

Not really, teaching tricks, but the business itself & maybe some general ideas to types of tricks.

Videos won't give you nearly as much information as books will. Jim Pace's book on this subject is highly recommended.
For general magical theory, I suggest Darwin Ortiz's 'Strong Magic' book.

The Resturant Workers Handbook--McGregor and Jim Pace

I am sure during this visit to the cafe Mr. Pace will be able to provide some great insights and direct you to other sources, but in my opinion these three will tell you all you need to know!

Scottie York has a video about bar magic - and he's an expert!

The video has given me a lot of advice on performing in general, not to mention in small and cramped conditions such as when table hopping.

A worthy investment!
