Is there a way someone could add a button/hyperlink so that when you're subscribed to a thread it takes you to the latest post (or better yet the first one you haven't seen) rather than the original post?

The subscribe button on the upper right corner will pretty much do that. If you are subscribed and anyone posts, you will get an email with a link that takes you to the thread (actually to the new post IIRC).
