Starting at about 8:40 he teaches some moves and he says the names of the moves but I can't understand him because of the accent. I think he called one move a Zed grip which I assume just means Z grip, then he splits the top of the three creating a four-packet arrangement, then slides off just a top card creating what looks like five packets.

Yes, it’s the standard Z grip for all those sort of variations from Chris Kenner Sybil where it all started from, in his Totally Out Of Control book.
