In performance you simply say "... As in a game of BlackJack, all picture cards have a value of 10". While I don't discuss this on the tutorial, you can actually have J=11, Q=12 and K=13 if you modify a part of the handling slightly. This method is perfect to handle and perform. I would be surprised if any spectator had the slightest idea how you did this, if performed correctly. Thanks David, well worth the $15.
